The recipe I’m about to share is the oldest cheese recipe on Earth. Why? Because cheese can happen accidentally and was happening before there were cheese presses, cheese shops, cheese cloth, even the word ‘cheese’. Think about it: What does milk do when left on the countertop for several days? It goes bad. Or, more accurately, it becomes sour. Given time and warmth, ambient bacteria will turn the sugar in milk (lactose) into acid. This fermentation also causes the milk to thicken and taste more complex.
